“I dreamt of sweet potato pie last night.” That was the first thing I said out loud as I woke up this morning. The BF laughed and bid me adieu before heading out to put in an honest day’s work. Meanwhile, I’m trying to figure out whether I can make my dream come true.
With only one sweet potato in the fridge I opted for sweet potato pancakes instead. I probably would have nuked the sweet potato in the microwave for a quick fix of sweet spud but as I scrolled through recipes the idea of pairing pancakes with maple butter intrigued me. Imagine a cold slab of caramelly smooth butter slipping and sliding on fluffy pancakes with a hint of sweet potato. Heavenly.
I’ll confess that I burnt 4 or 5 pancakes before getting the hang of it but I can recommend this sweet potato pancake recipe if you’re looking for something light and fluffy but with substance. Don’t forgo the maple butter though, it’s extra work but for me it really enhanced the sweetness of the pancakes and was a nice complement to its texture.
