Light lunch: Udon noodles with tofu & napa cabbage

Simple is often delicious.  That’s what I love about the udon noodles with tofu and napa cabbage dish; it calls for minimal ingredients and requires no time at all to prepare.  Lunch fixed in about 15 minutes is perfection for lazy weekends don’t you think?

Udon noodles with tofu & napa cabbage

The recipe for udon with tofu and Asian greens doesn’t call for a specific green so feel free to be creative.  I almost always opt for the mild napa cabbage (aka Chinese cabbage) because it drinks up the sesame and soy sauce very well and offers subtle flavors in every bite.

I was recently given the Gok Cooks Chinese cookbook and am planning to try out some of the dishes soon.  Hope to have some good ones to share in the coming weeks!  Stay tuned…
